Chef for food led pub. Monday Friday. 24k
I am looking for a new head chef for our food led pub in SE1.
We are a small independently managed pub company based in and around central London. Most of the businesses are city based, so operating Monday – Friday serving the lunchtime business community and the local evening diners. The venue is a traditional pub with a very big gastro influence, although that term seems so over used nowadays, I prefer to use a pub, selling great food.
The food brief is simple, good produce, prepared with minimal fuss to serve exciting, wholesome, modern British food. Unfortunately the menus we are currently producing are fairly standard in content and mediocre in execution thus the need for this advert. We want to be using local, seasonal ingredients, free range, organic meats and fish from sustainable stocks, caught with methods that don't damage the environment.
Most of all, we want to be proud of our food, and we want everyone to know just how proud we are.
We are looking for a like-minded person, someone who shares a passion for food. An individual who gets excited about reviving a long lost recipe or creating a brand new dish, someone who cares about every plate of food that leaves the kitchen.
That's the dream, now the reality. We still are only a small business, we don't have any awards and at present, even customers are a little thin on the ground. The kitchen is limited in both equipment and facilities and help at the moment is a kitchen porter who by his own admission “don't like to cook” The wage isn't fantastic (24k) and the hours are long splits.
