Sous chef
SOUS CHEF – PASSIONATE, DRIVEN, PROACTIVE, AMBITIOUS
Circa GBP18-20k, negotiable depending on experience
Le Piaf is a French Mediterranean restaurant brasserie located in Dulwich Village, part of a small family restaurant group. We are seeking an experienced Sous Chef who loves preparing fresh food, selling to customers, has a thorough understanding of the financial processes involved in running a restaurant, a strong personality and someone who is capable of leading a team during peak trading periods.
The Role:
You must understand and have experience within the following key business areas;
- An understanding of cost and control methods in relation to food margins
- An understanding of cost and control methods of BOH wage costs
- Experience with preparing staff rosters
- An understanding of up-selling techniques and the importance of customer satisfaction to the business
- The ability to establish and maintain rapport with local businesses/residents, thereby increasing repeat business
The Business:
- Rustic 80 seater restaurant
- 30-40 seater al fresco area during summer
- French Mediterranean, Modern British menu
- All dishes freshly prepared and cooked to order
- Kitchen brigade of 6 staff
- Situated in a prime location, in the heart of Dulwich Village
Reporting to the Head Chef of the business, this is a hands-on role, so you must be prepared to
roll-up your sleeves, support the Head Chef and lead the team from the front when required.
